What is man's single most important invention or creation?
It would probably depend on what time frame in history you're talking about...

industrial revolution/advancements in agriculture.
Otherwise all youse guys would still be hauling water in a bucket to the garden that takes all your spare time. No need for another job, feeding your family would be THE job.

Harnessing fire.
Without fire, no agriculture (can't eat wheat raw), no crockery or ceramics, no bronze, no steel.
No fire, no agriculture, no civilization.
You need civilization before you need a printing press.

Fire was undoubtedly important,...but man didn't create it. It was around a long time before man arrived on the scene.

Without electricity would refrigeration have ever been a viable option? Gas powered refrigerators were very popular and successful for many years. And by gas I mean propane, probably still lots of RVs using propane refrigerators, I know they were in the 90's and early 00's.

Amish, well some Amish allow the use of propane refrigerators here in PA. Popular here in camps without electricity.

I didn't want to read through all 13 pages of responses here, so forgive me if this one's all ready been thrown out there, but considering the continued existence of the civilized world is dependent on it's use, or lack there of, I'd have to say the nuclear bomb.

The development of agriculture is the great watershed defining line between primitive hunter-gatherers and civilization.
KC
This is correct because it allowed a farmer to create a surplus of food. Allowing some others to specialize in blacksmithing, philosophy, medicine, etc. the printing press accelerated this, but without a Steady food supply, all of those inventors would be hunting/gathering.

Fireball2: I vote for the 204 Ruger cartridge as being the single most important invention of mankind! No, really, I would have to say medicines and medical science have done the most to relieve human pain and suffering - including vaccines, x-rays, M.R.I.'s, CAT scans, nuclear medicines and the like. Good question - thanks for posing it. Hold into the wind VarmintGuy

The best invention was a woman. Made by God. This is debatable , however.
But the fruits of the spirit is love, joy, peace, patience, kindness, goodness, faithfulness, Gentleness and self control. Against such things there is no law. Galations 5: 22&23

what does one consider an 'invention'?
The first important innovation is tool use. Simple use of rocks to help in defense and foodstuffs
The next is agriculture, which allowed for food surpluses to allow classes of people who didn't have to spend all their time in getting food. Yes, that gives us politicians, but it also gives us inventors etc. that have time to come up with other improvements.
Then animal husbandry, thought it is likely at least dogs were already part of the pack. Force multipliers and more food, better food (more protein, bigger brain.
Then metallurgy, to make better tools, and other items of use etc
Actual devices that made differences? The first is probably the spear. Can keep prey and predator at a distance and reduce injury, and it can be thrown, with some more improvements. Pointy stick with fire hardened point, eventually becoming bow and arrow (and really firearms with the added 'control' of 'flame powders'
Preserving food starts with salt. Then ice, then refrigeration, once electricity grids were in place. Allows for Mega cities (I am sure there is some upside also)
Written word, so we can write down for longer memory, every inane thought and trivial idea
telegraph, telephone, cellphone, so we can send selfies
Computer, so we can post our opinions and annoy a broader group of people, than with word or mouth.

Hatchet, axe, and saw. And no small amount of insight of how to use them... Predicting things to come such as class envy and using govt to force equality on everyone. Excellent display of composition and musicianship, too. Listen close the lyrics. Nothing less than prophetic... https://youtu.be/JnC88xBPkkc
