My Grandma used to make this years ago. I whip one up every so often. It is sinfully rich, and not for the faint of heart, or those on a diet. The variations are fun to play with.

Pineapple Icebox Pudding


Vanilla wafers, crushed
One � cup 10X sugar
� cup softened unsalted butter
Two Eggs separated
One 15 oz can crushed pineapple
� cup whipping cream

Filling:
Cream the butter and sugar
Lightly beat the egg yolks, and fold in
Whip the whites with a little sugar, until stiff peaks form. Fold into the butter/sugar/egg mixture.

Line a pan with crushed Vanilla Wafers
Spread the filling over the cookies
Top with drained, crushed pineapple
Spread one cup whipped cream on the fruit
Top with a cup of crushed vanilla wafers
Sprinkle with walnuts if desired

Cover, and place in the refrigerator over night

Variations:
Chocolate wafers crushed, and canned cherries (not pie filling)

Honey Graham crackers, crushed, and chopped canned apricots

yes, you whip the whipping cream.
10X sugar is confectioners, or 'powdered' sugar. The white stuff.

Try substituting crushed Ginger Snap cookies for the Vanilla Wafers. Adds a nice bit of flavor.

chuckles, you are absolutly correct. This recipe works well with a variety of different crusts, and with different fruits.
Ginger Snaps, and apricots would be good together in this.
