Nothing says summer to me more than a BLT!! I still eat them the rest of the year too, but it's not the same without the garden tomatoes.

Summer is the time for delicious cold soups. This one has always been a big hit when I serve it. Cold Avocado Soup Two ripe avocados, peeled and cut into quarters Two cups home made Chicken Stock, or Shrimp Stock Kosher salt, and ground White Pepper ¾ cup heavy Cream
Additional Avocado slices for garnish Fine diced scallions and Parsley Cold Boiled Shrimp, peeled, or fresh lump crab meat, for garnish.
Put the Avocado pieces and some of the stock through the Cuisinart. Add salt and pepper to taste
Pour the pureed Avocado Into a small, heavy stainless Steel or Le Creuset pan, and add the remaining Chicken Stock. On medium heat, bring to a boil, then reduce the temperature. Add in the heavy Cream, and mix well. Adjust the seasoning. Transfer to a suitable container, and chill for several hours.
Serve in chilled bowls, and garnish with Sprinkle some of the diced scallion/ Parsley on top of each bowl Garnish with Avocado slices and the Chilled Shrimp or Crab meat.

I always though cold soup sounded nasty. Then we tried a gazpacho receipe, we loved it. Clear your head and give it a try,

Mostly I look forward to the garden fresh tomato's regardless of how they're used. It's the only tomatoes I eat all year other than canned. Other than that I'd say plain old Brats and beans with a little potato or mac. salad on the side.

Home grown tomato's. I seldom eat one unless it is out of my garden, except canned ones in soups and stews. Yellow squash, in bacon grease and onions. Fried and steamed okra. Fresh fish, fried. miles
Look out for number 1, don't step in number 2.

EdM Soup and cold does not work for us Sam... well then, don't fix it. laughing. You are missing out on a lot of good eats though. Gazpacho, Potato and Leek, and a host of other delicious chilled soups. There are some mighty tasty cold fruit soups out there too.

Sam, my first thought was cold soup? But, it might be worth a try. First, we need some summer weather around here.

I like cold pasta salad. I use multicolor rotini, grilled shrimp, fake crab leg stuff, fresh dill, cut veggies like onion, sweet pepper, cukes, lemon zest and juice, and cherry tomatos. I add a balsamic vinaigrette, and sometimes olives and cubed cheese. Easy to eat a big bowl on a hot day.

A cold soup makes sense on a blazing hot day.
As those aren't so common up here, haven't prepared it.
