One of my favorite side dishes. Everytime I make it it would be different; always good but sometimes better than others. I started looking for a recipe that was similar to how I do it that would lend consistency. I found one I like on the Hellman's site. Classic Macaroni SaladIngredients 8 ounces elbow macaroni (about 1-3/4 cups) 1 cup Hellmann's® or Best Foods® Real Mayonnaise * 2 Tbsp. vinegar 1 Tbsp. Hellmann's® or Best Foods® Dijonnaise™ Creamy Dijon Mustard 1 tsp. sugar 1 tsp. salt 1/4 tsp. ground black pepper 1 cup thinly sliced celery 1 cup chopped green or red bell pepper 1/4 cup chopped onion Directions Cook macaroni according to package directions; drain and rinse with cold water until completely cool. Combine Hellmann's® or Best Foods® Real Mayonnaise, vinegar, Creamy Dijon Mustard, sugar, salt and pepper in large bowl. Stir in macaroni, celery, green pepper and onion. Mac salad is one of my guilty pleasures. I'd roll with that recipe of yours, but without the bell pepper. I'd likely throw in some minced jalapeño, or several shakes of chipotle powder, or maybe even both! .. and I wonder why I'm getting to be a phatazz... FC

Agree Sam. Not 'needed' but like I said, I wanted more consistency. it was always good, but some batches better than others.
Ed- you'd be welcome...more mac salad for me!

We would add hard boiled egg and olives. But sounds good without. And probably miracle whip.

I often add celery seed, or fresh dill to any macaroni/tuna/chicken salad. I add celery seed to tuna and chicken salad, too. Friend used to rave about how it added good flavor. I figured, what can it add? I already put celery in there. I was wrong.

there seems to be a tendency to add way too many different flavors to something like Mac salad. Most of the time, layers of complexity are not needed, and actually work against each other.

I agree that's true in some cases, Sam. I've done it. Overcomplexity does not necessarily mean enhance.
Maybe that's why the older I get, the more I tend to gravitate to the less is better type of recipes. (ingredients).
I used to make a marinade for wings that was pretty damn good. But, over the years when I started peeling off some of the layers of ingredients, it actually got better.

Macaroni. butter and parmesan cheese works for me.
Maybe a little pepperoni or salami and mini broccoli tops.

LOL! Now we're getting somewhere.
I have to make another but bigger batch of macaroni salad tomorrow. I finished off that one.
As an aside, I like to call it "wireless radio salad". They say "huh"? I say " yanno, Marconi salad".

Best way to ruin mac salad is to add tuna hate when people do that and 10/4 on too much Mayo P.S. BYC that aint mac salad it's mac and butter with parm
