Make your own with pimento cheese and fried green tomatoes. Fried some baby squash too.

Thanks. I have a whole set of those...well...what's left of a set after some breakage over the years.
Don't like the soup bowls though so I picked up a couple of cheapies.

Gotta love the spring veggies.

I dipped the baby squash in buttermilk then rolled it in flour and cornmeal--about half and half, with salt and pepper, and I like to throw a couple tablespoons of finely minced onions, garlic, and chives in. I bet some bread or crackercrumbs would work too.

Tonight was roasted butternut squash in browned butter and garlic with farfalle.

Don't do too many meatless meals, but I've ate pretty rich with burgers and rack of lamb and rib steaks the last four days!

Fajita night, my way...finely cut beef, seasoned with...fajita seasonings, accompanied with slowly braised purple cabbage, and a sautéed bulb crop...following a paste of dukes, jalapeños, tarter and spices...topped with blue cheese and sour cream!....all the while accompanied with Ben Haggard and a couple of Blind Pirates...

Left over fajita meat?.....becomes a version of Philly cheese steak...arranged on a fresh baked baguette, a mix of Italian and grated smoked guuere, fresh thinly sliced onion with dukes and S&P.

That looks great........

Taco Tuesday here.....I always opt for a taco salad at the house
Ground chuck with onions an seasonings, black beans, rotell tomatoes, sauteed purple cabbage, crumbled corn shells, 4 cheese, mixed greens, sour cream, S&P...
accompanied with James McMurtry playing and banana nut bread baking....grin

Tried to replicate a dish I had a while back. Turned out pretty well.

Pique Peppers stuffed with some ground elk and spinach a little Romesco sauce and some Spanish Manchago grated on topped and heated until hot (I cooked the meat prior to stuffing)

It wasn't pretty but was tasty. The peppers came from the olive bar at Wegmanns.
