Drain the water from a can of spinach (two, for more servings). Heat on medium in a skillet or pot till it's got no visible moisture, i.e, no bubbling, but don't burn it. When it's low moisture, transfer to a bake-safe casserole dish. Let cool for ten minutes. Add two raw scrambled eggs and mix together. Add about three ounces of crumbled feta cheese and mix. Now top with three more ounces of crumbled feta. Put in oven preheated to 375 for twenty minutes (more time if you are making more of it). Delicious. I could eat it as a meal by itself. Sort of like Greek spinach pie, just without the phylo.

Excellent! That's what I'm doing next time. Although not the salt, because the cheese makes it plenty salty.

ib, have you checked the price of fresh spinach in the stores lately? It's crazy here! Little plastic 5 oz container at Aldi's was $1.99. Aldi's!! That would saute' down to about the size of a golf ball.

Going to have to check out the canned version again. I've got some decent recipes for it somewhere, too.

I have an aversion to fresh cooked spinach. It tends to give me a weird feeling on my teeth. Hard to explain if you are not effected by it. I love canned spinach, properly prepared.

one more suggestion , Heated Feta cheese becomes chewy and rubbery , consider adding it just before turning the heat off.

Frozen spinach has less moisture in it, so the pre-saute will be quicker. But a fine recipe, TRH.

When I saw the thread, I was expecting to see a high speed photo frame of a can of spinach being struck with a high velocity bullet! Which is a pretty good use of canned spinach, IMO. Give me fresh spinach, or none at all.

I tried this recipe and enjoyed it. Added some diced onion to the spinach in the pan but that's the only change. Great with grilled meat.

I have two cans going in the oven right now.......stand by....

Tastey......I added the lemon juice and olive oil......about a tblsp each....I might add more lemon juice next time.

They sell Glory brand Southern Style Canned Spinach at Wall Mart.....it's great as is their collard greens.....I'll try it next time..
