I like a lot of the ones already mentioned, Crystal probably favorite. A good one that's really mild but has great flavor is called "Tennessee Sunshine"
Kinda different, has seeds n [bleep] in it. Hard to find around here too.

Specifically those are Chicharron de Cerdo. Thick slabs of deep fried pork belly. Much different than those bags of puffed up airy pork skins you buy at the local minimart most people call chicharrones.

Fairly common at most local Mexican/Latino Super/Meat markets that have delis who make it fresh.

Nothing better than a big chunk of warm Chicharron de Cerdo slathered with fresh lime juice, hot sauce and a large ice cold beer.

A cigar shop I used to frequent put out a little spread on Saturdays when we were in there watching college football on the tube. I liked the "heart attack plate" which had a pile of cracklins, a link of boudin split down the side, and a pile of scoop style Fritos to use as edible utensils for eating the boudin.

My favorite is chipotle tabasco. I use it for grilling sauce, flavoring things, even drink it when I have a cold and need my sinuses cleared. I like the green tabasco on burritos 'n' such.

A month or two back I was having lunch with a gal I work with at a Mexican place across the street. Some jackwagon didn't snap the plastic cap back on the hot sauce bottle and I got about half the bottle in one taco. I think it was Cholula. I decided to try to eat it anyway. It wasn't as bad as I feared it might be.

El Yucateco Habanero green sauce is my favorite. The heat is extreme but the flavor is awesome.I use a bottle a month with a spare in the pantry.It's used mainly on tacos or other Mex food. For Chili , Corn beef hash ,eggs and bloody mary's I use tabasco

My favorites used to Yucateco. Since Mannlicher now shares his homemades with me, the Yucatecos don't see much action. smile

His homespun salsa verde and cayenne are my go-to's.
