Floured Venison backstrap cutlets properly browned in butter and olive oil (browned coating pink center), steamed asparagus and garlic mashed potatoes.

Quite enjoyable, I must say.

Last night we had mule deer and whitetail tenderloins.. Potatoes, carrots and mushrooms!!! Most favored the mule deer over the whitetail for taste.. Less gamey they said.. I tried both.. Taste was maybe a bit different, but if some one as for the label of each, I couldn’t have done it.. I think most of it came from their poor experience whitetails in Mich. swamps.. It was excellent, but I still prefer beef..

I've had a pot of Red Beans with Andoullie and trinity simmering for about three hours now. I put a couple cups of chopped Okra in this batch. I haven't tried it in Red Beans but I like it in Pinto's and Gumbo so I thought I'd give it a try.

Just put the rice on so it won't be long.

For the game tonight tomato basil soup and a grilled cheese. Last night was a stuffed artichoke. All was very good.

It was great Jim....my best batch yet. I should have tried adding Okra years ago.

I'll be eating it again tonight and we all know most things are better the next day. Can't wait.

Ya know.....I've never been to Cajun country but i should go because I sure do like Cajun dishes.

Ribeyes over mesquite at about 800 degrees, broccoli, and peanut brittle for desert, one of my all time favorites...

I'm thinking steaks/tbones tonite 5.77 lb.....with fried taters n Onion's ...and 57 sauce of course...for my fried taters mostly.…my drug of choice 57' ...ya I know I' m paying for j Kerry's boat .....

It was really easy and was plenty tasty.

Take a 9x13 glass dish and put 4 or 5 thinly sliced potatoes in the bottom. Little salt and pepper. I like the yellow ones.


Next dice a couple small onions and soften them up a bit in some butter....little salt and pepper.

Brown about 5 or 6 chops...little salt and pepper......and throw them on top of the onions and potatoes.

Cover the whole mess with a cup of milk and a can of cream of mushroom soup....mixed up in a bowl.


Bake at 400 for 30 minutes covered. After thirty minutes put some grated sharp cheddar on top and bake for another 30 minutes.


Family liked it fine.


I had a pork loin in the fridge that I used for the chops. Thick cut about an inch or an inch and a quarter.

Cheaper than buying them pre cut.
