It was really easy and was plenty tasty.

Take a 9x13 glass dish and put 4 or 5 thinly sliced potatoes in the bottom. Little salt and pepper. I like the yellow ones.


Next dice a couple small onions and soften them up a bit in some butter....little salt and pepper.

Brown about 5 or 6 chops...little salt and pepper......and throw them on top of the onions and potatoes.

Bake at 400 for 30 minutes covered. After thirty minutes put some grated sharp cheddar on top and bake for another 30 minutes.

Cheaper than buying them pre cut.


In MN they'd call that "Pork Chop Bake"........I'd eat it.

Lots of casseroles up here on the Hi Line. If you dont have cream of Mushroom or Chicken......well, I dont even want to think about that.



We had mannicotti(sp?) last night. Wife used the recipe on the box of pasta. Was pretty good.

Anyone have a good dairy-free corncake recipe? A bit of butter in the recipe is ok.

Tonight was simple. Taco/Dorito bake. Crescent rolls layed out in 9/13 pan, Sprinkle with Cumin and taco seasoning. Sprikle with smashed up Doritos. Seasoned taco meat. Top with cheddar and more doritos. Bake about 20 minutes at 350. After 20 min, splash some salsa, peppers, olives, whatever else you want, more doritos and cheese. Back in the oven just long enough to melt cheese. Plate it up, throw some lettuce and taco sauce and ranch on top....

I will have to try the taco/dorito bake.


We had a nice prime rib dinner at the GN in Malta Montana tonight. We first went to Saco and picked up a bunch of local hot dogs and bacon. Then we went to the Hot Springs.

There are only two places in Montana that I will order the prime rib. The GN in Malta and the Bar S in Great Falls.


The 7up Ranch in Lincoln used to be first on the list....but it burned down. The Lamp Lighter in Butte is closed too.


All the other prime rib I have ordered has been either tough and flavorless or too damn fancy.

With the high at 29 and the low at 18 it was slow cooker ham hock and bean soup last night. It will be the same tonight.
