There is this lost Texan who works in my building he has been trying to impress me for some time with his version of hot food. Gotta admit he has come close a couple times. One of his best attempts has been a concoction called an Armadillo egg. This little joy is really fine eats. So I decided to make a couple improvements on the basic design. First let me tell all you non-believers how to make an Armadillo egg. Armadillo's as many of you know are mammals they do not lay eggs. Now that is cleared up on to the fixin.
First obtain a dozen or so fresh jalapeno peppers split in half scoop out seeds and pith (the white stuff) keep respective halves together and do not rince. Mix a pound of hot sausage with a pound of favorite grated cheese add a 1/4 cup of anyones baking mix the kind you make biscuts out of. Kneed all this together, now my minor addition take the seeds and pith and mix it in the sausage mix I also add some smoked jalapeno powder for good measure. next stuff the peppers with a good white cheese...I like Jack. Here comes the fun part make a very thin patty of the sausage mix and use it to wrap the pepper. A little practice and you will be an expert pepper wrapper upper. once all peppers are wrapped you will need a package of Shake and Bake, I like Pork. This is the time to make an egg wash to dip the sausage wrapped peppers (eggs) in. Two chicken eggs two tblsp water and whip it, whip it good, whip it up.....stop it STOP IT STOP IT NOW... I'm ok. put the shake and bake in a good sized bowl and roll the eggs around until coated...I added some black pepper to the coating...might have been just a bit too much pepper at this point. Put the little eggs on a baking pan and bake for 25-30 min. Once cool slice up or eat whole.
How I know when things are too hot, My dog takes a bite then spits it out and heads for her water dish. Then it's just right.
Damd these are HOT pass the beer some one.

We strip the little rows of meat out and fry 'em... not much yield though.

Pumpgun thats Lutefisk spelled L-U-T-E-F-I-S-K. Now that sounds like a darn fine idea, wish I had thought of it, i would send some to Sitka Deer to help him through the long winter nights ahead. Them bad boys just keep getting hotter each day. The missplaced Texan is saying they are hot as the sweat beads up on his brow and he pants like a dog in the Texas mid day sun on the fourth of July. Just right he says lets see what they are like tomorrow.

Ah Tom your friend is a wise man, I don't eat that stuff either, at least not by choise, but when the Swedes get together in my family I am sort of obliged.One would think that after nearly 50 years of trying to eat this stuff I would learn to like it....not so. The Swedes could have ruled the world if they had just found a way to make everyone try lutefisk, the very threat of being forced to eat this stuff would make most folks surrender and give up their lands and crops.
