Made up a batch of soup from the rack off a bone in prime rib.
Since it was already browned from roasting, I just split it in half and tossed it in a pot with a chunked up carrot, stick o celery, and an onion. A bay leaf, some peppercorn and thyme added them covered with water and simmered for about 5 hours.
Strained the broth, picked the meat and tossed the bones, diced up another onion, more celery and carrot, and a bunch of de-stemmed collards along with some [bleep] mushrooms and a parsnip.
Veg got a saute in a big pot, dumped the strained stock back in, a couple cups of pearled barley, let simmer for an hour then finished with the picked meat and more thyme, salt and pepper.
I love making soup. Love to eat it too!

Yep, just finished making turkey n wild rice soup & ham bone & pea soup. Can't decide which to freeze !!

Must be soup season. I just went to town and bought the makings for some Beef Barley and a pot of Cheesy potato with bacon. I'll make the Beef Barley first, freeze half, and then make the Potato when that runs out. Bought a loaf of Texas toast so I'd have something to sop it up with.

Chicken Pesto Pasta White wine
Cut 2 chicken breasts in 1/4 - 1/2 inch strips 90 degrees (perpendicular) to the grain of the meat
Slice 1/2 cup each red, yellow , orange bell pepper in 1/4" slices
Saute chicken until it starts to brown (could use shrimp or scallops) and is thoroughly cooked.
Add in peppers and steam slightly, very slightly to maintain crispness and color.
Add 1/4 - 1/3 cup pesto
Stir and mix
Add in pasta toss/mix thoroughly again
Plate and top with shaved Italian cheeses
Cook 2-4 portions of spaghetti, linguine, or fettuccine (your choice)
Time the cooking to add in freshly drained and hot as the other ingredients are ready
Chilled medium dry white wine (Pinot Grigio) of your choice

three pounds of flank steak, seasoned and cooked over pecan and oak coals. Served with my chimmichuri sauce, a green salad, and green beans cooked with onions and sausage.

One of the best frozen pizzas I have ever had as it was just my wife and I tonight after the kid rush. Out of a shop in Austin. Remarkable.

Antelope roast in the instantpot....some carrots, onions and garlic with red wine. It came out more tender than I would have ever expected.

Should have had some hard crust dinner rolls to go along with it, but didn't. Leftovers tonight and the rolls were there

Stuffed Pork tenderloin. Butterflied the tenderloin by thirds. Pounded it with the mallet until it was thin. Stuffed it with fresh Spinach, wilted and mixed with dried plums, pine nuts, Garlic and olive oil. Rolled it up, tied it off with twine, topped it with bacon strips, and baked it at 390F for 45 minutes. Served with egg noodles in home made Alfredo sauce. Had the kids over for dinner. They liked it.

Western Family iced oatmeal cookies for desert.
