Might be several books on the subject, but I know there are many examples up on YouTube. I am on old dude, learned from a mentor years ago. Many different ways as well depending on the critter.

This is a good one, covers a lot more than field dressing. Guy was an Army veterinarian in Europe at the close of WW2 and the book started out as his notes used for teaching civilians how to do it for survival I believe.

As Snake River Marksman noted, my wife's big game cookbook Slice of the Wild shows various methods of field-dressing. But it also includes the latest scientific info on meat care, plus a bunch of recipes with side dishes.

The Complete Guide to Hunting, Butchering and Cooking Wild Game by Steven Rinella is a very informative book and could be a very good book for a new Hunter.

This is a good book -- I recall getting it about 20 years ago.

By the way, follow natman's link and you will see that you can get a used copy from Amazon for as little as 5 bucks including shipping. A steal!

I've cleaned deer several different ways over the course of my hunting. Every now and then I learn something new. Last year a coworker said to make a cut through the skin from the tail to the back of the neck and skin them in two halves. It was amazing how much easier to skin a deer is in two halves. it pulls almost all the way off with one good yank where it would have taken a bunch of cutting to get the skin free.

best book in the world is to hand him the knife on the next deer and talk him through it.

He lives in Florida, I live in Wyoming. Makes it difficult to be a mentor.

Go on line. And find him a copy of The New Hunter's Encyclopedia! The copy I have was printed 1972! Information on most game animals in North America, from habitat to hunting and caring for game after the hunt! Also camping, shooting and just about anything related to the sport of hunting! My children and grandchildren just about worn out the pages!

I’d go with MDs book or look on the Kentucky Afield tv show website they have an excellent game processing video.
