Jim, to me moose is the best of wild game.. This was a mature cow with no calf.. Axis deer is the best I have eaten, but after eating wild game steady for the last 50 years, I need a break...

When I hunted in NE BC in 2008 I had the opportunity to have a dinner sampling of tenderloin of moose, elk, mountain goat and Stone sheep. The latter won and I ain't a fan of lamb here. That said, most dinners were elk and moose and moose won hands down. A bit off topic but when the plane dropped me off for this horseback hunt the camp cook, the very young daughter of the Stone sheep guide, had been stomped by a horse when the departing hunter ran to get in the picture off his "set" camera. The horses startled and the young, little gal took the hit. They flew her out on my plane. About now it is dinner time without a camp cook and with guides worried, "how do we tend to the client". I offered up cooking (some here know I enjoy it) and asked where the spices and veggies were. Onions, garlic, bell pepper, chili powder, cayenne, pinto beans and an azzload of moose meat. We ate like kings that night.

Willing to share a recipe for the Beans/Greens/Sausage?


Bacon Tater soup last night. Venison "Sheppard" Pie the night before, about the only way I can get my wife to eat regular veggies... She'll eat all the dark green veggies (Brussels, Spinach, Broccoli, Asparagus..) But to get her to eat corn, carrots, peas, etc takes an act of congress. I gave up and tell her she can cook herself dinner if she don't like it.
