How do you good folks do the chicken dish?

Hawaiian style, huli huli 10 pounds boneless skinless chicken thighs 1/2 cup pineapple juice ½ cup soy sauce ½ cup brown sugar 1/2 cup ketchup 1T fresh ginger root, grated 1T teaspoons minced garlic 2T sesame oil Dash of red pepper flakes or Siracha for some heat sesame seeds for garnish green onions, sliced for garnish Put chicken in large bowl, add mixed marinade and let set at least 2 hours before cooking but better overnight. Over hot coals grill chicken 5 min per side, then put to side of grill for indirect heat ~250F and let finish cooking for 30-40 minutes Serve with sticky rice.

What goes over at our house is to grill chicken quarters with a touch of seasoning (Chacherie's) or season salt and pepper. Once done, brush with BBQ sauce of your choice and leave it on long enough to carmelize/get sticky. Nothing fancy, but my oldest son will put away quantities of that which are almost embarrassing.

What is sticky rice?

Huli-huli tastes at least as good as it looks. I rarely have leftovers when I make it, everyone comes back for seconds or thirds. For my son's high school graduation I did a big batch of huli-huli, whole roasted piglet, hot links and more. Huli-huli was polished off, still had some roast pork and sausages.
Super easy to make, the only thing that's optional is the pineapple juice. Don't omit the sesame oil, it really is a key flavor component in many Polynesian dishes.

Look up "Roadside Chicken". You'll be glad you did.... Hard to beat plain ol' fire company fundraiser chikken and the like cooked over charcoal. Spray with a mix of melted butter & vinegar throughout the cook. mmmmm,mmmmmm, good

Since I started making huli-huli it's about the only way I grill chicken. The framing crew on our house was mostly Russian/old believers so I grilled up a big batch of shashlik to thank them for the great job they did I pulled the recipe off the net, don't recall exactly what it was as it's been a few years. When I was in Kazakhstan one of the best dishes I had was shashlik from a small booth along the river. It was a simple dish of chicken that was just whole butchered into chunks, a simple marinade and grilled over who knows what type of wood served with toast and onions. I think the biggest key to the dish was chickens that are raised to taste like chicken, not produced by the millions in factories as quickly as possible.

It's an Asian short grain white rice that his high in gluton and hence sticky when you prepare it. Should be able to find it in an grocery store that has an asian food section. Calrose rice works as well.

So who made huli huli this weekend? Guilty Turned out great and with sticky rice put it over the top. I mopped the thighs frequently and the marinate/sauce set up nicely leaving a sticky, slightly sweet coating.
