Shot a pig last week and canned one loin by cutting it into strips and canning with red pepper flakes and taco seasoning. Worked late tonight so I emptied a jar into a skillet and added a teaspoon of oil and a half a chopped onion. Made up into about the best pork tacos I’ve ever had. And it only took five minutes, literally.
Need to shoot more pigs and repeat.

You can come shot ours Jim. As you said you don’t want the bastards up there. I shot 2 out of a group of 21, one out of a group of 4, and caught a bunch with dogs that fell to the knife all in the last month. Most folks don’t eat them but we take the loins out of smaller ones that don’t stink and they eat just like store pigs. I tell folks that look at me funny for eating them that pigs is pigs, don’t matter where they live they’re just pigs. I even made Canadian bacon out of a whole loin off one I shot last spring. Tasty stuff but it takes a week at least to make.
