http://davescupboard.blogspot.com/2011/01/making-shagbark-hickory-syrup.htmlI will be making some Shagbark Hickory Syrup in the next weekend or two. Anyone else make this? I will be following pretty much the recipe I linked, unless there is some better knowledge out there?? Should I water bath can it in Mason jars or is the water bath even needed for a 218 degree syrup? What do maple syrup producers do? Good recipes/ uses for this syrup? I'm thinking pork chops with hickory syrup glaze! Thanks!

most interesting. i'll have to plead ignorance on the syrup part. my grandmother often made hickory nut cakes instead of using black walnuts. the shagbark hickory and another large hickory (shellbark?) were used. crack them on a shoe horn, and pick out the goodies for the cake.
will stay attuned to this thread for more info on hickory syrup.

That is an interesting thing. There are a lot of different trees that are used for sugaring beyond maples...
Mark Begich, Joaquin Jackson, and Heller resistance... Three huge reasons to worry about the NRA.

The shagbark hickory syrup that TN Griller made turned out excellent. On a hot buttered biscuit, it is wonderful.
