Deer backstrap, seared in CI pan, finished in the oven, rested to perfect medium rare, scalloped potato casserole, steamed green beans & broccoli. Built a pan sauce from the scrapings, bacon drippings, flour, stock & the resting juices, after slicing the meat.

Ham Sammy, homemade dills, a nice slice of a walla walla sweet onion, some mayo, yellow mustard, and horse radish.

YUM.. But wow, not sure I can can eat the whole thing. Sorry if pictures are not focused (dang phone).

Guac is one of my all time favorites - we make it twice a week, sometimes more. We make our own chips though but those are great chips....

Yep........browned the sausage in a little lard, removed them and browned the spuds in the drippings, added some chicken broth and onions, put the sausage back in, cabbage on top and simmered with that big heavy ass lid in place for about 45 minutes. The juices were the best part...I was tempted to lick the dish but the dogs were watching.

One of the nice things about the Southwest Is the year round access to good quality low cost Hass avocados. Yeah used to make our own chips when the kids were still at home but those will suffice. More time for drinking beer.

Bought a value pack of pork chops at the big grocery store.

They put the nice ones on top, ugly ones underneath. I think there are 20 in the pack. 2.50 a pound.


For me anyway, the uglier the chop, the better the flavor. A loin is fun to cook with, but has no flavor.



So we pan fried several, with instant mashed and some steamed broccoli.

Wasn't a scrap left.
