Rubbed with dipshit southwestern spice, cavity stuffed with bacon, beer in water pan & maple pucks.
First 2 hours, breast up, 2nd 2 hours breast down so the rendered bacon fat moistens the breast.
Exactly 160*, in thigh, when pulled, tent & rest for 20 minutes.

Had a buddy in high school who lived with his grandparents. We use to run over to his house on mid morning breaks couple times a month and his grandma had that exact meal waiting for us.
Bacon, potatoes cooking in the bacon fat, baked beans, fried eggs, white bread and percolated coffee.

I scorched scallops last nite. My bride made an awesome salad.

Hope he was just funnin' us. Many years ago a friends drag racing sponsor dropped off several hundred pounds of sea scallops, mushrooms and garlic cloves at the track along with a dozen or so chefs to prepare them.
Around midnight we were eating like kings.Once in lifetime exp. for me. YUM !
