Last night, the girls and I had supper for their Mom.

Pounded chicken breast rolled around real stuffing.
Garlic asparagus (from our patch) and mushrooms in butter sauce.
Real mashed potatoes and gravy.

Tonight, hot dogs and baked beans.
All factory food.

Parents who say they have good kids..Usually don't!

Easy to make, just need to be around to stir and monitor liquid for a few hours.

Truth......Red Beans and Rice are second only to Gumbo in the world of Cajun cooking.

RB&R are Creole and New Orleans in origin, though they are popular in Cajun country too.

Made one of my skillet dumpster meals tonight.

Browned onions, rough chopped tomatoes, chopped garlic, fine chopped sun dried tomatoes and ground beef. Dashes of balsamic and red wine.

Over med grain white rice stirred a little during cooking to make creamy.

Side of plain Normandy style veggies.

I live in Louisiana, south of I-10, so the distinction between Creole and Cajun is more readily seen.

Question: Does that make you a genuine coonass as I'm not familiar with the territory ?

Finally finished the Wild Turkey you recommended ages ago. Thanks !

Wouldn't someone's mentality, or maybe a better phrase would be State of Mind, also factor into the coonassity equation for some folks? I know it does with us hillbillys.

Ha ! I've been in West Virginia close to ten years and from time to time a friend will say "you're one of us now " which is high praise indeed coming from some of these rough ol' boys. Having said that it was just a week or so ago that I was sckooled in the proper way to lean against a truck bed when drinking beer laugh which is not taken lightly here. They've got it down to an artform. My city ways musta been showin' through.

Education is a never ending thing even in the land of the toothless.

With all due respect to mathman I'd like to put it out there that Bud Light is king here and the local economy would likely collapse without it. Sorry MM. wink
