Turns out great however you have to do a little tweeking as you can’t cook the chicken in the sauce for a long time like the pork as it dries out breaks aparts etc.

What we do is the wife cooks the sauce with chicken broth and I’ll toss a cold rotisserie chicken on the grill to give it some marks and extra flavor. Then into the sauce for about 30 minutes until everything comes to temp.

Just a slight variation on the pork version. I like lots of Hatch chilies in my verde sauce as well. I like the 505 brand when I can’t get them fresh and roast them myself.

The Grits were fantastic....I always use Sharp Cheddar but the Cream Cheese is a nice variation. It's really rich though....I feel like I just ate the hind quarter of a Wildabeast.

PM me your address and will send you stone ground grits done at a little privately owned grist mill about 3 miles from the house. My great uncle owned a water powered grist mill from the early 1900's to the mid 1960's. I never had store bought grits or flour until I was a teenager.

Chicken & rice soup today for a very late breakfast (?) then a huge sous vide ribeye (5hrs @140) finished on the Weber chimney for a good sear (90 seconds per side) for "lunch" followed by a huge bowl strawberry shortcake.

Somewhere today despite savage attacks by my recliner there was a burger thrown in for a "snack"

I'm bloated tired smirk

I grilled some chicken pieces tonight.

Did a rub, cooked them slow.

Seasoned again, did the apple cider thing, brushed on a bbq sauce.


Some of them were blackened.

They were not on fire or anything........they just turned black.

Tasted good.

I made another pot of King Ranch Chicken Soup (it doesn't have any noodles in it so I hope I don't offend anyone's dad by just calling it "Chicken Soup":)
This stuff is addicting......easy to make too. It's definitely gonna become a staple in Charlie Land.

Years ago Alex Hamilton put up a recipe. At least I think it was Alex Hamilton when he was writing for Handgunner or something like that.


It was a King Ranch tortilla cheese layered casserole type of thing....if my memory serves.

Wish I could find it.
