Does anybody know a good gunsmith that I can send my Remington 700 300 WinMag bolt to to have the extractor replaced it is the old model with the Rivet.

Those extractors are available, I just installed one a short time ago.

OP,
ALL of the .532" face Remington bolt noses have riveted extractors.

IF your local guy DOES NOT have an ANVIL to hold the rivet head while peening, pass on his practice & seek a professional.
