Indirect on a gas grill I'm guessing? I'd wrap it in foil if you don't want it to taste like a piece of nuked cardboard.

Rub put on BGE 220 -225 degrees and leave it alone till I get an internal temp of 195-200 degrees

i would. i usually put a little bbq sauce on it and wrap it and bake at 275-ish until done. its real important to let it rest after you pull it out of the oven. just unwrap it and let it sit in the foil for 15-20 min before slicing it.

Every one of them is different. I had a prime grade packer brisket from Costco go to 212* before the flat was like butter. I've also had them almost falling apart at 195-200*.

Ahhh...thanks for the info.

This one was a little tougher than I wanted.

Did not know you might need to vary the temp.

The only brisket I have ever eaten has been cooked by me....and I have only done two.

I have no frame of reference!
