Looks good! What temp did you pull it, Jim? One hundred and ninety eight degrees! Every one of them is different. I had a prime grade packer brisket from Costco go to 212* before the flat was like butter. I've also had them almost falling apart at 195-200*. Mike

Beans, macaroni, taters, a Biscuit, and a tbsp of corn.....clearly George likes his starch. BTW.....those beans look awesome. Garlic mashed, green beans, and Blanket's BBQ sauce. A good Stout/Porter would have been my choice but PBR'll do.

This one was a little tougher than I wanted. Did not know you might need to vary the temp. The only brisket I have ever eaten has been cooked by me....and I have only done two. I have no frame of reference!
