Every one of them is different. I had a prime grade packer brisket from Costco go to 212* before the flat was like butter. I've also had them almost falling apart at 195-200*.

Ahhh...thanks for the info.

This one was a little tougher than I wanted.

Did not know you might need to vary the temp.

The only brisket I have ever eaten has been cooked by me....and I have only done two.

I have no frame of reference!
