Still waiting Ed. Might be awhile. I can tell you how I roast the peppers and seal them in a bowl under plastic wrap and then peel them. But that’s all she’ll let me do. It’s the home made chile relleno sauce and fluffy batter topping that I don’t know anything about, on purpose.

I finished off the last of that Green Bean Potato Bacon concoction.

It's hard to find recipes for one so I end up eating a lot of leftovers.
Fortunately most dishes are better the second day and I get the added benefit of only having to cook dinner every 3-4 days.

Since I fugged up and didn’t take pics last night. Here’s breakfast. Chicken, bell peppers, chives and cheddar cheese with torts and avocado. 16 oz side of don’t fuqk with me.

We had kind of a slow morning so the wife cooked bacon and eggs.

Bread went bad so we had a hamburger bun.

Probably going to have a store bought dinner tonight.



Might buy some Walmart-o salmon too.

I thought I had used up all of last year's antelope but found one last package in the back of the freezer this weekend. Marinated it in a bit of teriyaki then smoked it for a few hours, way off the heat so it barely hit 130 degrees and then cooled it and put it in the fridge. I also had some fresh picked squash and corn and a ripe avocado, so I grilled the squash and corn, made some quick guac and put it all with thinly sliced smoked lope on corn tortillas with a generous hit of Cholula.

As much as I like seared antelope, it was much better than I expected smoked.

It was a hard decision to dump one of my beloved IPA's in there but sometimes ya just gotta suck it up.
The whole-grain mustard really wakes it up...I'll probably make it again.
