Nice looking dinners folks.

Pizza birthday party at a local joint for the grandson, everything dinosaurs. Turned two.

Yep.....it's very similar to Bratwurst but this is all pork where all of the Bratwurst recipes I've seen call for 20% - 25% beef or veal. A lot of them call for a binder like an egg and/or some powdered milk too.

I'm getting my courage up to try making some Boudin pretty soon...I have all the makings on hand now.
I'll make a thread....keep an eye out for it.

Anxiously awaiting the outcome. I had some Boudin years ago at one of the 24HCF pig hunts that Pat provided as well as grilled. Darn good stuff !!!

Might dig out my grinder.

Yea....from what I've read the traditional way to prepare Boudin is to poach it but they say it can also be grilled or even smoked.

My understanding that it's cooked (poached ?) prior to being stuffed into the casing so it is in fact a "cooked " sausage. The grilling part is an extra process and darn good ta boot.

Yea....everything is cooked prior to stuffing the cases but a lot of recipes say to poach it afterward. Some mention grilling or smoking too but they all say the traditional way is to poach.

I like the idea of grilling or smoking too....I'll experiment.


BTW......those are some big Boudin's.....I like that idea. I think I'll make about half of mine that big. The rest I'll make smaller and have em for breakfast. I read that they're good with fried eggs.

Free Pizza!!!

Our local market has a points type card. Someone pointed out to use that we could use it for different things besides just a percentage off an order. We decided on a pizza at the local Eyetalian place.

1 topping pizza, wife wanted pepperoni. For such a small burg here the pizza (and their Italian food) isn't too bad. But I'm glad we didn't have to pay for it. Nearly $20 if we had to pay, for a large pizza! I'm too old for those kind of prices.
