Yea....it's pretty much meat and potato's over in the LC valley Geno. Cracked Pepper Corns are in the exotic food section.

When I was researching Boudan recipes the majority of them called for Pork Liver.....I didn't even bother looking.

Fortunately I found one that called for Chicken Liver.....it was awesome.

That is Veal Marsala.


Don't look for veal in the Lewiston/Clarkston area unless things have changed since 2012 or so. When I worked up that way in WA I went to L town one day, just happened to be my birthday. Thought veal would make a nice Bday dinner and seeing as how I was attending to business across the street from an "Italian Restaurant" I stopped in there, was seated and given a menu and a glass of water and left to choose my dinner. The young lady (20yo?) came back and I stated I didn't see veal on the menu, perhaps I overlooked it or it was an off menu item? Her reply...........................

"What's Veal"?

Therefor the quotes around "Italian Restaurant".........................it's not one in my mind if they don't have veal, scallopini, Marsala, Parmesan, or any other dish.

I couldn't find any in other restaurants in town or in Clarskston, including some of the fancier ones I'd never regularly go to.

I might have to look for a Kosher/halal butcher shop the next time I'm over in Redding as most groceries no longer carry it.

Make me hungry thinkin about it.

Five minutes from my house. grin

I kept a mother going for about ten years in the late 80’s into the 90’s. Could never ever get my sourdough to the texture and taste of Boudin. Obviously it has to do with the local strains of lactobacilli and yeast found in the Bay Area and the commercial ovens.. Finally around 2000 Boudin started building out into the Valley and we got one about 10 years ago. All their sourdough is still comes from the 160+ year old mother. We have been part of the buy one get one free a month club since they opened here.
