Just a suggestion...

Start by cooking salmon flesh-side-down, then flip onto the skin. That way you can slide the meat right off the skin with your spatula.

I love the skin crisped up in sushi and leaving it on the grill makes it ready that way.

Standard glop to put on the cooked flesh side after flipping is a mix of butter, sauteed onion and garlic, a big shot of Worchestershire, and a little bit of lemon juice. Just mop it on the cooked side...

And do not over-cook it!


Oh, you can take my word for it, it wasn't overcooked. I like it raw. Grilled too when not over done.

I was a bit afraid to ask my wife if it was a bit undercooked for her tastes, but she can take the thin side if she wants.

Both my wife and I like fish a bunch and we both seem to prefer simple "dressing". This batch was just a bit of lemon pepper stuff sprinkled on the flesh side.

I'll try the flesh side first the next time. This way it was pretty easy to take the skin off though. I eat a piece now and then...................our dogs love it too!

This one came in and was begging for some while I ate mine at the computer last night.

I can honestly say that Ive never grilled salmon flesh side down.

can't see the need. I do see risks with the mesh-size on Geno's grill.

S&P, garlic, then a few minutes over heat to crisp skin, then indirect until almost done is my standard.

Big on the sear for the flesh side... and finish on the skin side... Pretty hard to get the flesh side seared without direct heat on it. I like mine looking like it may make it up the next falls inside.

Those flakes you worry about will be safer if cooked first... one of the reasons we do it skin side down last...
