As it has cooled dramatically here I made a pot of chicken and rice soup. We both enjoyed it and will have it again tomorrow night.

Locally grown (well, within 50 miles or so, but out here that's local) uncured ham shank. How do you get a tomatillo to be red?? I roast the tomatillos. While they're roasting, I steep chili's in a pot of hot water until they are soft. Then I put them in the blender. This batch I used one Guajillo chile and a hand full of Chile de Arbol. Some salt, garlic, oh, and half of an onion. You can make a pretty darn good salsa for tacos, chips etc this way. If you cannot get fresh tomatillos, just used canned.
