Added beef consommé, red wine, fresh cracked black pepper and sea salt, a few bay leaves and some slivered garlic.



And finally, the beef shanks. Salt and peppered, some more garlic, fresh rosemary, some dried thyme and parsley.


CRAP !!! I forgot the tomato paste... Back to that step. I hate it when I forget something.

Now, 4-5 hours in the crock pot.

PS, I hear that bear stuff stinks and isn't very tasty.................you should pack it up and send it this way. I'll take it off your hands. To heck with the import/export laws if there are any, I'm just helping out a fellow man.

Meat was SO tender, I used a plastic spoon to eat it. No knife or fork.

I boned my thighs & had it in 2 jalapeno cheddar croissants, fresh from the Walmart bakery !

My meat barely fits...

I really miss my trips to the Southwest.
Huevos Rancheros was my first "Mexican" food cooked where they know how.

We have Mexican restaurants here, but they are "Authentic".
The food is good. But it's not right.
Kiss my a--. I prefer unauthentic.

Chicken thighs, pasta, pasta sauce, avocado, lots of cracked pepper & finished with "zested" grana padano.

Ha ! 'bout all we have here is Kraft slices and Velveeta .

We have our struggles with "good stuff" here too.

Mostly get specialty stuff in the big smoke, 4 hours drive each way !

I tried my hand at making some of those Scalloped Potato's with Ham that have been discussed here lately.
To keep it simple I just bought a few slices of ham at the deli which ended up making the dish awfully salty even though I omitted the salt that the recipe called for due to my blood pressure. They were tolerable though but I think I'll just make the traditional kind without the Ham and Cheese next time.

Charlie, next time soak or boil the ham 2-3 times pouring the liquid off each time and the salt content will be greatly reduced .
