Try this one... Just back from Panama in July... tried something with a "not-so desirable" fish Jurel is https://en.wikipedia.org/wiki/Pacific_crevalle_jackIMHO, many fish types would also work… Big Bluefish… Big Rockfish, Cod, Cobia etc. Rinse off Jurel fish slab ( #5 slab maybe)... pat dry on paper towels… Slice into narrow strips (aka fish sticks). Dip in a beaten raw egg, then roll in bread crumbs mixed with Mrs Dash Roasted Garlic and Herb blend… pepper or whatever. Pan fry in a thin layer of oil... i.e. fish sticks. Eat them for dinner and done... OR --------------------- Make Fish cakes... Allow to cool sufficiently to then Shred/mash the fish Mix with: 2-3 beaten eggs (holds everything together) 1/2 cup mayonnaise 1/2 cup Texas Pete (more or less to taste)... or other hot sauce of your choice 1-2 cup crushed potato chips (more or less)... smash up the chips inside the bag 1 tbs Worchestershire sauce 1 tbs mustard salt and pepper to taste Once mixed well in a bowl, Scoop out in 1/2 cup portions and fry in a pan of hot oil, shaping into patties as you set it into the pan.

Cook each side until dark golden brown… about 1/2"+ to 3/4” thick... If you do any thinker they will be undercooked in the middle. Serve on toast or a bun with a generous serving of bread and butter pickles or sweet relish... Think crabcake... or fish burger. Damn good eats. NO tofu required...

Roadside chicken on the Smokey Joe. Red tater salad, Three bean salad out of a jar. Ice cold milk. Maybe a sip of apple pie 'shine later on.
Google roadside chicken recipe. I don't remember running across one that wasn't killer.

Well, cept for maybe Richard. Every night cant be Delmonicos I guess!
After swimming we went back to Malta.
I had a nice strip steak and shrimp.
Wife had a chicken fried steak.
Kids shared an appetizer platter of mini corn dogs, chicken drum sticks and mac and cheese bites.
I like T bones and strip steaks.
Seems like you dont find them on the menu very often any more up here.
Its all tenderloin and ribs.

Ribs and tenderloins are okay.....if you are only worried about texture...not taste so much.

Sing Brother, Sing. I get the strangest looks at work when I saw that don't like Fillet. It's ok. But some will say how tender their Fillet was. Big deal. If I thought chewing was hard work, my pants would be smaller. Seriously, last night night it was Dillon (The Boxer) and Karl (me) for supper. At the store, steak was short. I found a nice looking chuck roast about 1 1/4 thick. W-sauce, Lawry's season salt, garlic, olive oil. Hot grill, almost bunt on both sides. Tasked better than any loin. Good meal, steak, with a drink on the side. PS. Wasn't tough either.
Parents who say they have good kids..Usually don't!
