How will you cook your Thanksgiving turkey? In an oven, smoked, on a grill, fried, sous vide? Will you brine it? Etc.

I haven't had turkey done on a pellet grill, but the chicken cooked that way has been outstanding.

We do 2 turkeys for Thanksgiving. I will fry one, and the wife will do a brined turkey. We love both and have too many people to feed with just 1 turkey.

Didn't pan out as planned as our little store din't have any breasts in stock. Came home with 14 lb. Butterball which barely fit on my small smoker.

Got my bird in a BOP simmering ATM to make gravy. Lotsa chunks floating to the top for sammies later tonight.

Wound up with about 6 qts. of wonderful strained stock after simmering for several hours but neglected to make a mire poix as I was lacking carrots.

Question:

Wait till tomorrow and go to the store for carrots or use the celery and onions on hand.

??????????????????????

Use what you have on hand. I made a pot of turkey noodle soup earlier today, without carrots or celery, and honestly it might be the best I've ever had.
