I just googled up a good looking recipe and put the parts on my shopping list.

Dam you Fats...you know how weak minded I am when I see a sausage dish.

I like the looks of this one.....hard to go wrong with Hot Mustard and dark Ale.

It was a bit of inspiration as originally I was just gonna grill them. Saw some onions in the pantry while drinking one of my German Octoberfest beer.

You can use the Googler like Charlie did Jim or here's what I did.

Bias sliced in half five uncooked brats. Pole to pole silced two yellow onions. Tossed all into a pan with some olive oil. Med-High until sausage skins and onions browned/carmelized on both sides, lid on the whole time when not turning.

I piled onions ontop of the sausage during this process added granulated garlic and cracked pepper on top.

Dumped beer into skillet when I liked the color of the sausage and onions. Turned down med with lid off.

Heaping teaspoon cornstarch, couple spoonfuls of hot beer into bowl mix until you have a slurry. Add enough liquid in bowl to mix fully then dump back into skillet. Turn to low and simmer until thickened with a nice sheen minute or two depending on how much cornstarch you use.

Cover pull of fire wait a few mintues then serve.

Good looking recipe. Lots of extra goodies I didn't think to use. Except mustard, thought about tossing in some but decide to keep it simple.

Chicken drumsticks, marinated in Chinese 5 spice & Deb's "secret ingredients", slow oven roasted till almost fall of the bone tender & served over our wild rice blend with scoops of pan juices.

Rumaki.

We make a duck rumaki. Soak chunks of duck breast in sake, soy sauce and fresh ginger.

Wrap a 1/2 piece of bacon around duck cube with a slice of water chestnut. toothpick it and grill.

Mind blowing!

I made a Cajun Chicken and Gravy concoction that I found on the net last night.
It's basically just some Trinity, Chicken, and light roux but it was good.
I'll probably make it again but I'll spice it up a little more next time...might use Andulie instead of Chicken too....or both. smile

AI also made some Green Beans from the same site.
I was leery about the Brown Sugar/Red Pepper Flakes combo but it was quite tasty.

Seems like you could take that chicken dish different ways by changing just a few ingredients.

That's what I was thinking Phil.

Funny thing is Gumbo Lite came to mind when I was making it.
Change that butter and flour to dark Roux and add some Sausage and Okra and it would be Gumbo.

The light Roux's a nice change though......I'll experiment with it and see how it goes.
Course it's pretty good just the way it is too. I might otta just leave well enough alone but what fun is that.

Rainy afternoon so a project.

Chunked up the last elk roast in the freezer and used the basic Julie Child Beef (Recipe).

Went with bacon and pancetta to up the fat content a bit due to the game. I also do the trick of completely cooling the meat after the braise and reheating it to split it up a bit.

Served it over some mashed Yukon Golds. Perfect dish for the day and the leftovers will be even better.
