Choice.

$4.47/pound at Vons. Limit one. I bought the biggest one they had. 4-bone.

Then went to Ralphs and they had $4.99/pound. Manager let me have two full racks still in the distributor's packaging. One was $100 and one was $86.

I am going to separate the ribs out, cut into steaks, vacuum seal, and freeze. We'll have ribs here this weekend and then start working on a pile of steaks.

Might get another one. We probably won't see another big sale like this until the 4th of July.

BTW: ever seen the look on LA people's face when a guy in camo pants and an orange sleeve shirt and hat hits the checkout line with two rib racks. Oh man!

There's a Restaurateur in N.J. who ages his own farm raised beef in a cooler lined with Himalayan salt blocks. He claims that his steaks cannot be beat.

Choice here in Southwest Florida. $6.99 ended yesterday. A bit more than last year at $5.60 lb. I bought about 35 lbs of standing rib roast yesterday.
I pick through it to get the best looking roasts. I trim of the ribs and vac pack them. I cut the roasts into really great and thick ribeye steaks to be vac’d and frozen. They have a sale on standing rib roasts about twice a year. Keeps me in ribeyes and beef ribs for the year if I catch both sales.

P.S. Of course, round here they would just say "any luck?" or "shoot a big one today".

We can get Choice boneless prime rib from the wholesalers for our diner at 5.79 a pound. These will run about 17-23 pounds and are vacuum packed.

Just bought another at Ralphs. I count 7 bones. 25.70 pounds of Choice, $4.77/pound, $122.59.

Supposedly at full pop ($14.99/lb), it would have run $385.24.

I have some cutting and vacuum sealing to do.

Should have seen the look on their faces when a red neck in greasy jeans and a SnapOn hoody buys 14 whole eight bones and gets told $2296.37! Choice, ordered in October, wet aged for 30+ days. $7.99 #. They averaged over twenty pounds each.

We served 120-130 for our clubs Family Dinner. BBQ cabbage, smashed red potato\twice bake, and a roasted tomato soup.
