Everyone else, congrats on the good eats............even the Spam right out of the can.

Tonight's was rather nice here. Pork roast and vegies. (carrot, turnip, celery, taters)

Wouldn't call it amazing, but it was delicious and filling.

PS, Fat City.............................there's some carnitas makings there. My cast iron will be getting a work out this week. Gonna hafta whip up some homemade tortillas for that.

Looks good Geno.

I just bought a big ol pork Shoulder roast myself a couple days ago.

I plan to use half of it to see if I can replicate Bob's Goulash recipe and the other half to make some "Hunters Sausage" I've been wanting to try. The roast doesn't have as much fat as I would like for sausage but it's 1/3 bacon so I think it'll be ok.

Hopefully I'll start feeling better and can get back on the job soon but until then it's a couple of scrambled eggs, cottage cheese and peaches, and chicken noodle soup and I don't mind telling you...........it's getting pretty dam old.

Charlie, I feel for you and hope they get it figured out soon.

Took folks with medical degrees, testing labs at their disposal, etc 7 months to figure out what was going on in my guts. Well, some blame goes to the insurance companies for the try this/try that first before we authorize a colonoscopy. Oh, there was a little event called the Carr Fire involved too, only burned up a big section of Redding. Finally got that authorization and scoped, diagnosis in a coupla days after the biopsy, scrip for some steroids, and wonder of wonders 3-4 days later and I was back to normal. They tried no dairy, FODMAP diet, cut back on this, cut back on that. Pain in the arse not eating what I was used to/like to eat.

I hope the sausage comes out great, knowing you it most likely will.

Say hi to your pups,

Geno

Was at my daughters apartment yesterday and it was dang cold outside so I thought
why not make some bone warming soup, and I did, Ron T's Hearty Bean Soup !

RONS HEARTY BEAN SOUP

2 lbs. Great Northern beans ("dry", NOT pre-soaked, rinsed well, foreign objects removed)
2 Large onions, chopped medium
1 Large head of garlic, minced
1 Tbs ea. Olive oil and butter
2 Ribs of celery (no leaves), chopped medium fine
lb. Slice of lean smoked ham steak, rind removed & ham cubed (1/2 inch) 1 Large ham hock thoroughly wrapped & tied-off in cheese cloth
1-2 Tbs. Franks (formally Durkees) Hot Cayenne Pepper Sauce (to taste)
1 8 oz. can of Hunts Tomato Sauce
1 Large or 2 medium carrots, sliced, then diced medium ( to inch)
4 Tbs. Bac-Os Chips
1-2 Tbs. Hickory-flavored liquid smoke (to taste-Wright's Hickory-flavored is good)
1 Tbs. Lawrys Season Salt

1) Add butter & olive oil to pot, saut onions & garlic until softened.

2) Carefully cut rind off of the smoked ham slice in as few pieces as possible.

3) Place all ingredients (including the ham rind) in a large pot and cover.

4) Add enough water to cover ingredients plus an additional three (3) inches of water.

5) Bring to a boil, reduce heat to medium-low and allow to heavy simmer (somewhat more than a simmer, bubbles constantly rising) for 4 hours, stirring occasionally.

6) Check the beans for doneness (beans should be cooked all the way through, but still very firm). If not done, heavy simmer an additional half hour or so. Check beans again.

7) Adjust seasoning (add more Season Salt if needed). Remove ham rind from pot before serving. Serve with freshly-chopped onion.

--------------------

Mmmmmmmmmmmmm, amazing as always, and a tribute to Ron T, an incredible gentleman, and excellent chef.

Got a top round roast in the oven after browning it on the stove. Carrots under and onion slices over.

Pork mixture in the deep fried lumpia Charlie grin

But as a portion of the overall meal it was small.

For me the highlight was the lime fruit jello cup. Just like Grandma made.

I know what your going thru as well wife and I have really cut back on our meat consumption.

Do I look like I would know what Lumpia is? smile

I'm eating store bought Chicken and Noodle soup and a few Crackers tonight but I'm not sure it's really chicken.

Homemade cornbread. Homemade sausages, homemade sauerkraut with hot peppers, onions, and celery and a little whole grain mustard. Washed down with an ice cold brew. YUM !
