Incase any of you food scientists was thinking what I thought several years ago when Boudin branched out of SF.

Quote
Boudin has many California locations, including a flagship on San Francisco's Fisherman's Wharf. Scientists say that yeast taken to a new environment will take on new characteristics, which is why Boudin's bakers say they ship each location 30 to 40 pounds of the mother dough monthly.

Sorry Geno looks like logistics are against that caper.

if only I had an insider,

I'd get a monthly shipment smuggled in every month too!

We're lucky enough up here sorta. We have this place in K' Falls. They use wild yeasts in their breads and some are excellent. I'm just finishing up a nice Onion Rye, only the end left since Wed and I'm the only one eating it.

If you're ever up that way, look them up. They make very decent pastries too. I'm a cheese Danish kinda guy and there's is more than passable.

Leftover Albóndigas soup.

It was good last night and as usual even better tonight.

I'm still not feeling very well and we all know how our taste buds change when we're under the weather so I'm either lucky or I really nailed the spices on this batch but it's my best to date.

It's just Mescan Meatball soup.....it's really good though.

Here's a couple of recipes.

https://elchinolatinococina.wordpress.com/2014/04/05/sopa-de-albondigas/

https://lilluna.com/albondigas-soup/

PS.....make the meatballs smaller than you think they are......mine tend to come out too big.
They're edible but bigger than the ones in the restaurants I've had it at.

This is indeed some of the finest bread I've ever had. For several years, I had an associate who would order me a box of it for Christmas.

I gave up bread a while ago, but would break that ban instantly if I had a loaf of that in front of me.
