The bird is out of the freezer, the plan is to make a casserole to take to our daughter's place Monday.

My wife has a recipe, but any suggestions are welcome.

I’ve always like the good ol cheesy chicken, broccoli, and rice type of thing.

Chicken, rice and cream of mushroom soup?

Chicken green chile enchiladas casserole is another fave.

Cream of chicken soup is a wonderful thing. We go for lots of carrots, celery, and frozen green peas in any sort of chicken-based dish.

Skip the water chestnuts.

I second the chicken cheesy broccoli rice.

We have my MIL's chicken broccoli casserole recipe here somewhere.

It's terrific.

Ironbender,

I've tried a number of chicken & broccoli casseroles from recipes on the net, but I been repeatedly disappointed.

If would be great if you could post your MIL's recipe!

I made chicken casserole for my grandaughters birthday supper last night. BBQ chicken with your prefered spices don't overcook it. Let chicken cool cut into small pieces. Cook some spaghetti. Mix chicken spaghetti a bag of frozen vegetables (thawed) 3 cans cream of mushroom soup 1 can cream of chicken soup 6 tablespoons parm cheese ,salt and pepper to taste. Put in oven at 350 for 45 minutes take out cover with shredded cheese put back in oven till cheese melts. Easy and tasty

John,
This recipe has spinach not broccoli. Of course, broccoli (small chop florets) could easily be substituted. We keep talking about tne substitution, so i think that's why i was thinking it actually had broccoli.
Wife thaws frozen spinach and squeezes it dry in paper towels.

Thank you ironbender!

I will try the recipe with spinach first, then I'll try the brocolli!

I like the other stuff so I'm optimistic about this recipe! Sharp cheddar, mushrooms and especially cottage cheese!

If it's anywhere near as good as their chicken soup it'll be a winner.

I googled a couple of versions.....it sure looks like it is.

This version is pretty close to what I do. Say no to condensed soups in other recipes....
