I have one that was born in about 1885 from a bakery in PA. It was given to me by a friend of mine that is somewhat of an expert on homemade "back yard" pizza making. Just google Matt Frampton pizza. Long story short, I have been feeding it and adding it to bread and pizza dough for almost a year now. Every two weeks I have to split it and feed it, so anyone that wants to undertake a "bubbling pet" that lives in your fridge just pm me and I'll send you some. This would be a good time of year to do it due to the cold conditions of the season now.

over time, the natural yeast in your kitchen replace the original starter yeast. What you use today, is not the same as what you started with.

I'm not nearly bored enough to sit there intently watching a jar of dough.

alla the yeast we use, and is with us has been around for a long long time. might have been some mutations going on.
"they" say that lager yeast came out of a tree in south america, and then got discovered.

So, I just did it again. I mixed some whole wheat flour, and water in a bowl. Maybe this time! it will end up in some bread.

I dearly love sour dough bread and pancakes, but I travel so much that it is almost impossible to divide, feed, and care for the starter.
