Grilled pork chops, lima beans ( butter beans to us ) cooked with fatback, baked tater, and roasted carrots ( butter, lemon, and thyme )

Pork temple cutlets, floured, seasoned, fried, and finished in the oven, mashed potatoes with some gravy from the cutlets, can of green beans drained and fried in the pan that already has bacon and onion browned in it, cabbage salad (cabbage sliced, carrots peeled, green onions sliced small) with sugar/oil/vinegar/salt/pepper/celery salt dressing. Joint venture between the wife and me.


Not a real member - just an ordinary guy who appreciates being able to hang around and say something once in awhile.

Stuffed chicken hips, mashed, red beets.
Got up at the normal 4:30, started the electric smoker,
rubbed 2 10# butts, and got them smoking.
About 5 they were done. No plans for them other th an vac seal and freeze one.
The other will probably just erode away over the next week.


I like this Digital Char broil. Was afraid it wouldn't have the power to maintain temp.
We were single digits this morning, 20's all day. It worked perfectly.

A while ago EdM sent me a bunch of stuff so I could try and make an actual batch of chili.


I did as the recipe said, simmered a bunch of dried chile and browned the meat.


My goodness. Never had anything like it before.


We all ate the hell out of it. Onion, cheese, home made sour cream and a couple Fritos as a garnish.


Made Tex's corn bread too.

Today I stopped in a little store that a couple Mexicans took over.
They have a in display of dried peppers.
Now that I have a source, I need some direction.

Just the dog and I for dinner tonight.

Canned chili frito boat and beer. Dint look nuttin like that Jim.

And yup on the dried rehydrated chiles being the best flavor for whatever your making.
