I dont think I have ever eaten tenderloin Ed.
How did he fix them? Salt and pepper and grill? Lightly dusted with Cavender's All Purpose Greek Seasoning then grilled on gas.

Sunday, marinated some chicken Marylands & oven roasted; Spent many years in Maryland and hunted quite a bit on Maryland's eastern shore which is serious chicken country and never heard the term. Looked it up. It's Australian.

Made some roasted tarragon chicken the other night and the flavor was lame. Used fresh seasoning too ???

Did you "bash up" the tarragon in a mortar & pestle ?
I usually do, add a lug of EVOO, rock salt etc, etc, grind to paste & apply marinade for couple of hours.
Cook to liking.
The marinade I had on the chicken from the weekend was red chili flakes, combination of fresh herbs (basic poultry seasoning stuff), whole sliced clove of garlic, EVOO, salt & splash of dry white wine to thin out the paste a bit.

Last night my wife poached some fish. I was skeptical but it was great. White wine, garlic, butter, olive oil, chicken broth.
Steamed broccoli.
Tonight she grilled a couple t bones from our new beef.

I pan seared some ahi and made a simple dipping sauce with a side of sauteed zucchini. Wife was pleased as was I.
