Pork is traditional but chicken works as well. Wife made it a few times skillet precooking cubed chicken. Allows it to standup better in the chile like pork.

Sure, not something you see a lot of here in the states unless you eat at a Mexican household usually out in the country.

With goat though because its a much richer and stronger flavored meat lends it self to the red ranch style sauces.

Turkey is also popular with chile verde again not something you'll see in restaurants.

Chile verde is just a sauce and there are a great many different types of sauces used in Mexican style cooking.

Chile verde and Chile Colorado are the most prolific in the US especially in almost all Mexican Restaurants.

Only time I ate goat it was grilled.
Thought it tasted like deer meat, but with fat that tasted good.

The first one was cooked on a spit. It was dry and tough as hell.

The second one was stuffed inside the cavity of a big ol Hog and cooked in a pit all night,
It was delicious and just fell off the bone.
I suspect the all night soak in hot pig juice had something to do with that.

Last time I had a pit cooked goat inside a pig was the mid 80's for a cousins Quinceañera.
