Well folks, we served the German dish tonight to a German woman. I have lost the "knack" to post from Imgur, but it was passable.

There are two near us here. One about 30 minutes the other about 10.
The 30 minute drive is better but the close one works in a pinch.

When I was a kid I ate at the Edelweiss in Colorado Springs.
It may have well been Martian food.

Any tips, or methods to use might help. Doesn't look like you needed help. My family tree(Czech German Russian) would be very proud of that. It's been a few years since I had hocks.
