With Antelope season on the doorstep maybe some favorite ways to prepare for the table? Got a tag I hope to fill and some recipes would be welcomed....yeah, I know gotta get 'em first but thinking ahead!! rookie

Got a tag I hope to fill and some recipes would be welcomed....yeah, I know gotta get 'em first but thinking ahead!! rookie I like to chicken fry antelope. For me, the key to eating antelope is not the way you cook it but how you handle the meat in the field (prolly a universal truth for game, but antelope can go from delicious to inedible pretty easily if you mishandle it in the field). I try to have it gutted and quartered and on ice within an hour of pulling the trigger. A friend once insisted that I was being too cautious with that schedule and he threw the field dressed buck into the bed and then drove around a few hours trying to fill his tag. That was one of the worst tasting antelopes ever, and I blame it on how it was handled after the shot.
Eliminate qualified immunity and you'll eliminate cops who act like they are above the law.

Every antelope I've killed, snapped pics, and started boning, get the hide off, meat off the bone in a cooler. One of my favorite meats. Like remsen, I like chicken fried best..
Ping pong balls for the win. Once you've wrestled everything else in life is easy. Dan Gable I keep my circle small, I’d rather have 4 quarters than 100 pennies.

Agreed.....I think part of that is because Antelope season starts so early in most states. In NV it started in late August when there really wasn't that much difference in the air temp and the animals core temp so we carried lots of ice.

Antelope hunted with a Mexican guy who had some butcher experience, he made some breakfast sausage out of a couple young bucks we killed. Best stuff I ever had, they were to die for.
