Who takes the whole breast/keel bone out when they spatchcock?


It's how I learned to do it, but most recipes don't.
They just mash the thing sorta flat.

The whole purpose is to make it a flat uniform rectangle to quickly and evenly cook.


Also, who slits the butt and tucks the legs?

Another point missed in most directions.

Dropped the ball.
Birds are smoking right now.
One didn't get tucked, somehow the butt skin got cut off,
Nothing to work with.

I dont cut the spine out. I just split a close as possible to center w a knife.

I rarely do pics, getting too old for tech i guess, memory has always sucked.
The link was supposed to be pics posted, it is one tucked, one not.
You can see how it holds everything tight into a consistent package.

And they were supposed to be done. blush
But old Dipshit set the temp, but forgot to program time.
The damn thing then reverts to a 140 degree holding temp.
Soooo, wife is picking up something while she waits for daughters piano lesson.



In my defense, I left work at 2, hit two grocery stores in a torrential storm,
came home, did the birds, covered them in marinade the younger daughter had
made for me, scrubbed up the inside of the smoker and got it started,
and was ready to take the older one to school tennis practice for 3:30.

Then they canceled practice!

Smoked chicken for a bedtime snack I guess.
3 of the bastards, I wanted some for tomorrow's lunch. crazy

Only done it once, but took the keel bone out and just folded the legs over, not tucked in.

I hesitate to even mention it, seeing as how folks seem to love their beer can chicken, but have you folks ever looked into the coatings applied to beverage cans?

I’m happy to drink beer from them, but don’t want to cook with them.

Beer cans couldn't be safer.


It the beer inside thats dangerous.


No one ever woke up the next morning.....hungover from licking beer cans.....wondering if they had used protection the night before.

Inside of most cans are lined with an epoxy and bpa. I ain't worried about drinking out of them, or dying, but I won't make a habit out of cooking with it and feeding it to my kids.

Did another spatchcock tonight on the Vision Kamado. Wife really likes it. Says we should do one for company.

Personally, I like it even better next day, once the smoke really settles in.
