Either will work just fine, but my preference is for the good ol 06. And why? Because it just works.
I try to stick with the basics, they do so well. Nothing fancy mind you, just plain jane will get it done with style. You want to see an animal drop right now? Shoot him in the ear hole. BSA MAGA

308. Easier to get shooting, easier on the shoulder, less powder, less fuss, same results.

308win (shorter range .30-06) [vs] .30-06 (longer range .308win) ... such choices can drive some to drink.

.30-06. If desired, you can get heavier bullets loaded in it over the .308. Other than that, they are identical. I prefer the .30-06 because I have had one since 1968 and have several now, but none in .308. It's pretty much a nostalgia thing and one less caliber of ammo I have to keep up with. And, it just works. As an after thought, a .308 is a shorter action than a .30-06, but that is not an issue for me, either way.

Neither is a bad choice but the 30-06 has always been the sweet spot for me. I seem to reach for it more often than the others

How about a 300 Savage? 30 cals have been getting the job done, in the field, near since the advent of smokeless powder. No other caliber has more honest-to-God classics. Almost no bad ones!

I still have 30-06, but haven't hunted with it in 10 years since trying 308. I have the option of carrying a 308 of the same weight with about 25% less recoil than 30-06. Or a 6 lb 308 with about the same recoil as an 8 lb 30-06. I figure my 308 will hit hard enough at 400 yards to kill anything on your list. The 30-06 hits with the same speeds 50-75 yards farther away, but 400 yards is pushing the limits of my shooting skills so the extra speed is wasted for me. The recoil reduction and option of a lighter more compact rifle are more important to me.
The only time I envision going back to 30-06 is if I were hunting big bear, or in an area where they lived. The 30-06 shoots the heavy bullets much better than 308. But as long as a 180 gr or lighter bullet will get the job done 30-06 doesn't offer enough advantage to justify the extra weight or recoil If I were skilled enough to start taking 500+ yard shots at game 30-06 wouldn't give me much of an advantage. I'd probably pass over 30-06 and go to one of the 7mm or 30 caliber magnums. But I'm not good enough to need one of those.

And for those that shoot factory ammo, most 30-06 stuff is loaded at 308 speeds...

Perhaps the .30-06 would have been a better choice???? This cow got Scenar'ed with my 20" .308 T3. she was a shade over 600 yards (about 615). She was moving through the trees and while I actually meant to put the bullet right behind her shoulder, I caught her square on the shoulder, but given the uphill shooting position that I had I did not complain. It is the only time I have ever caught one of the projectiles too. Found it just inside the offside hide. Did precisely what I needed it to do. Filled my freezer with zero drama, as always.
