I have more kitchen knives than Carter has little liver pills. Over 50 anyway. I have Japanese knives, German, French, American. Favorites and most used are the K Sabatier carbon steel ones. I rarely ever sharpen mine, but touch them up regularly with a steel or a strop. One of my very favorite knives is one that I designed and talked Tim Olt into making for me.
