Who likes beets?
They seem to be a love/hate thing. Not much middle ground. I get it...they are fairly bold and earthy, I can see where some folks wouldn’t take to them.
Me? Always enjoyed them about the same way I do tequila. They are awful and awfully interesting all at the same time. One bite begs another.
Mostly eat them pickled. However I just set aside a bowl of boiled beets with lemon zest and balsamic. Gonna roast them in a bit. Thinking it won’t be awful.
How you folks do beets?

Both ways but prefer the pickled beets over boiled. Local restaurant has the pickled ones on their salad bar. Half my salad plate is in beets.

Store bought pickled beets are always in my fridge. Fresh beets from my garden are sliced, sprinkled with EEVO, salt and cracked pepper. Those are grilled over coals. Golden and Bulls Blood beets are my favorites. Their tops are also delicious.

I like pickled beets a bunch. Always drop off a bushel to my grandma every year for canning. They’ve been the best since I’ve been old enough to remember.

I dont like them very much.........but I canned a crap load of them this fall.
I will consume them however.

I like them pickled, roasted and in soup. Borscht is some dang good winter soup!

Yep. Don't forget the eggs! We always can them pickled, but when they are fresh, I like them boiled and buttered. They are a pain in the butt to can. Well, getting them clean and undressed is a pain.
Parents who say they have good kids..Usually don't!

I like them pickled, and we can them that way. My mother used to boil them, and serve them that way. They were okay, but I prefer them pickled and eaten cold, rather than hot.
