This year is the first time I’ve grown any of the big winter squash varieties. I’ve gave away most of them but kept a few.

What do I do with the dang things? Cook them obviously, any ideas? Do any of you have a favorite way to prepare them?

I’m doing one of them for thanksgiving, just don’t know what to do with it besides baking.. Thought about just making instant pot squash soup out of it, which I really like. but that’d be kind of a shame to do to these, that Hubbard probably could have got a ribbon at the county fair 😉

Cut in half lengthwise, scoop out seeds. Rub cut surface with EVOO, salt and pepper. Roast cut side up in a 375* oven until tender.

Rich in vitamins and antioxidants.

If you take the time it takes, it takes less time.

Thanks bender, I’ll just keep it simple like you say.
