Last night we took five pounds of white tail, mixed it with 5 pounds of pork shoulder, some salt pepper, nutmeg, garlic, egg, and milk.....oh, and some super strong blue cheese.


Mixed er all up and stuffed it.


Fried a little test patty. Hole E Smokes it was good.

You might look at www.riflesandrecipes.com. Eileen Clarke has been publishing game cookbooks for around 30 years, and along with science-based info about field care and butchering your own meat, there are hundreds of recipes for venison--not just deer but caribou, elk, moose etc. The books not only explain why vension varies in toughness and flavor, but how to adjust for those, since wild game isn't a standardized product like commercial meat.

Don't forget Green Chile Stew with venison burger.
Served OVER
boiled potatoes cut into 1/2 inch or so pieces and al dente for my tastes
elbow macaroni (wife's choice)

Yes served over over those starches neither cooked with/in the stew.

Try marinating a pack of steaks in Veri Veri Teriyaki® Marinade & Sauce I find it at Vons Safeway it is like pure candy BBq and eat.
