Meatloaf needs to be very dense; especially for sandwiches next day.

The loaf pan? It has a false bottom, My wife bought it, and likes it. I call "my", meatloaf, "Disappearing meatloaf", much better than reappearing meatloaf.

I prefer Quick Oats to bread or oatmeal, and I like to microwave the chopped onions for a minute before adding to the mix - it makes them more tender.
Another nice change is to use your regular recipe, except form patties and grill them. I can flip up to a 1 lb. patty, but smaller is good too. The extra browning is great. I brush the sauce on top of the patty after the flip. A 1 lb. patty only takes 10-15 minutes on the grill.

My girlfriend makes an awesome meatloaf. She adds diced tomatoes, minced garlic, onions, egg and can’t forget the Worcestershire sauce. Usually 1/2lb ground elk, 1/2lb spicy Italian sausage.

Looks good Wabi. I add green chiles to mine, and have found that I like panko crumbs better than bread crumbs or outmeal, but to each his own. I also use a little buttermilk instead of milk. Smoke that sucker next time instead of oven cooked and you'll love it! Looks good though, nice work.

It works great because the grease goes to the bottom so the meat loaf isn't swimming in grease. Always remember, "Don't let your meat loaf."

I go 1/3rd's beef, pork, and veal or just 1/2 and 1/2 beef and pork.
I saute carrot, onion, garlic and celery (I like a lot of veg in my loaf) with some olive oil and butter and some fresh herbs. Usually thyme and parsley. Let it cool and mix in with egg, bread crumbs, meat, and maybe a splash of milk.
Salt and Pepper is a given.
As fats said, sheet pan works better. Sometimes lace it with bacon.
